INGRÉDIENTS:
  • Pickled Tofu
  • Cucumber
  • Avocado
  • Radish
  • Brown rice
  • Soja

This wholesome work lunch has everything you need: Veggies, protein, and some brown rice to keep you energized until work is over!

To pickle the tofu:

  • Dice ½ block firm Tofu into small bite-sized pieces and place it in a container.

  • Put the ¼ cup vinegar, ¼ cup water, 1 tsp salt, 1 tbsp honey, and ginger in a small pot, bring to a simmer, and then pour over the tofu. Ideally, allow it to marinate overnight, but an hour will do.

In the morning,

  • Grab the brown rice, cucumber, avocado, radish, soja, and pickled tofu and pack it up with some brown rice, fresh herbs, and a pinch of black sesame seeds — no cooking required.

In the top pouch!

Add balance the overall with some fresh fruits, small cookies or nuts to snack along the day.

Get the cutlery out and enjoy the chopsticks.
